I’ve been submitting photos to the Grow Your Own magazine Virtual Show competition this week. Today this was my entry in the ‘best dish made with own ingredients’ category.

It’s a baked stack of King Edward potato and perpetual spinach with a sticky beetroot and tomato sauce on top. To the left are Spagno Bianco beans on agretti, then some fried tomatoes. To the right are a courgette purée and a carrot taster. The herbs are french tarragon and basil.
Everything was home grown apart from the olive oil used for frying and as a drizzle on the finished plate.
