
Keftedes are a Greek dish, usually meatballs but here based on grated beetroot. This recipe was on the Guardian web site, but comes from The Modern Vegetarian by Maria Elia (Kyle Books). In with the beetroot are grated hard cheese, breadcrumbs, soft cheese, spring onions and various herbs. I chose to coat them in breadcrumbs at the end. Not at all difficult to make but grating the boiled beetroot is very very very messy! Show someone your hands and they’ll think they’re covered in blood!
